TECHNOLOGY | It was an excellent vintage, we harvested beautiful fruits. The grapes were beautifully shrivelled, interspersed with botrytised grapes. Harvested at the very end of October, cold maceration for a day. After pressing, the must was settled then the free-run must – 27 sugar degree of must – was inoculated. Cold fermentation lasted 40 days. The fermented wine was debourbaged and half of it was aged in 5 hl new barrels for eight months, while the other half rested in steel tanks. Blended in August and bottled in early October. 7000 bottles were produced. |
