TECHNOLOGY | A blend of four wines. The grapes for the base wines were harvested at full maturity with high must. Each variety was harvested separately at the right time for the variety. The grapes were fermented in stainless steel for 24-30 days after crushing and de-stemming. Each base wine was racked into different sized barrels and aged for 15 months. The wine was blended in early August 2021 and bottled in mid-January 2022. 4456 bottles were produced. |
