TECHNOLOGY | Late harvest Leányka, harvested at the end of October in the Almagyar vineyard. After crushing and destemming, the must was cold macerated for a day then pressed. The must was settled at 6 degree C, then the next day the clear must was inoculated and fermented at 12 degrees C. The fermentation lasted for about 6 weeks, after was racked off the gross lees and agedd in 2 pieces of 5 hl second-filled barrels. After 15 months in barrel, it was destemmed and bottled in April 2018. |
